Her best armor definitely. It's elegant and provides good protection and she looks perfect in it. (Garrus's comment: "just don't start testing your reach and flexibility in the middle of a battle")
And I totally imagine this being some prototype Alliance armor with enhanced bio-amp (and your painting seems to agree with that). Because my Shepard would definitely get something like that for his eternal love.
Of course, her broker outfit is nice, too (and probably optimized for archeology as well), but "Liara you are not going on a battlefield in that, even if you stuck a bunch of armor plates under it."
